Makes
4 cups
  • 1 liter of whole milk, organic and raw if possible
  • 1 sachet of Yogourmet yogurt starter or other starter

Directions

  • Pour milk into a clean pot and heat over medium until it reaches 180o (use a candy or food thermometer).
  • Let milk cool to room temperature or at least 100o.
  • Open sachet of starter into a bowl.
  • Add a couple tablespoons of the milk and stir to mix.
  • Add the starter back into the pot of milk and stir gently to mix.
  • Pour into clean jars or 1 litre tub.
  • Place in a yogurt maker for 8 hours or longer.
  • If you are sensitive to lactose leave for 24 hours for lactose-free yogurt.
  • When finished, place in refrigerator where it will keep for up to 3 weeks.

Additional Tips

Try making your own yogurt, from raw milk if possible.  Add fresh fruit and honey to flavor the yogurt after it is done.  If you don't have a yogurt maker, try setting the tub of milk on a heating pad set to a low setting, or set jars in the oven with the pilot light on. For the first few times, check the temperature of the yogurt every 3 hours to make sure it stays between 105o and 115o.
