Kale Guacamole


Description

As if you need yet another reason to eat more avocados. The kale really bumps up the nutrient value of this favorite dip so enjoy!

  • 1 bunch lacinato kale
  • 2 clove garlic, minced
  • 4 ripe avocados, flesh removed
  • 1 small red onion, diced finely
  • 1 1/2 Tablespoons lime juice (or more to taste)
  • salt and pepper to taste

Directions

  • Peel garlic.
  • In a food processor, chop kale leaves and garlic.
  • Remove avocado flesh into a bowl.
  • Dice onion and tomato and add to avocado and mash together.
  • Add pulsed kale and garlic to avocado along with lime juice and salt and pepper to taste and serve.

Additional Tips

Do you have a picky eater in your family? Pulsing greens in a food processor makes them hard to notice in dips, soups and sauces. You won’t even notice them in this delicious guacamole, but it gives you yet another excuse to eat tons of avocados (like you needed an excuse!) YUM!
