Chocolate Coconut Raw Bars

8 2x3 bars
- 16oz. pitted dates
- 1/4 teaspoon extra virgin olive oil
- 1/4 cup ground almonds
- 1/4 cup ground walnuts
- 1/3 cup unsweetened coconut flakes (the smaller the better)
- 3 teaspoons unsweetened cocoa powder
Directions
- In the bowl of a large food processor add the dates and the olive oil and blend until a large ball forms.
- Add ground nuts and coconut and process to combine.
- Move the mixture to a large bowl, add cocoa powder and knead with your hands to thoroughly combine.
- Press the mixture onto a flat surface to approximately 1/2" thickness.
- Cut into bars, wrap individually and place in the refridgerator for extended storage.

















Additional Tips
Soaking nuts and seed in water on the counter overnight makes them more digestible and nutritious.
