Cherry Raw Bars

A great alternative to store bought 'grab'n'go' bars.Ingredients

8 2x3 bars
- 16oz. pitted dates
- 1/4 teasp. extra virgin olive oil
- 1/2 cup ground almonds
- 6 oz. dried cherries (preferably Montmorency or a similar tart version)
Directions
- In the bowl of a large food processor add the dates and the olive oil and blend until a large ball forms.
- Transfer dates to a large bowl.
- To the food processor add the ground nuts and cherries and process to combine.
- Move the mixture to the bowl with the dates knead with your hands to thoroughly combine.
- Press the mixture onto a flat surface to approximately 1/2" thickness.
- Cut into bars, wrap individually and place in the refrigerator for extended storage.
